Ingredients
Scale
1 cup (230 g) mayonnaise
2 tablespoons ketchup
2 teaspoons granulated sugar
1 tablespoon rice vinegar
1 teaspoon regular paprika
1 teaspoon garlic powder
1/4 teaspoon fine salt
1 tablespoon water, plus more as needed
Optional: 1/2 to 1 teaspoon Sriracha
Optional: 1/4 teaspoon toasted sesame oil
Instructions
Add the mayonnaise, ketchup, sugar, rice vinegar, paprika, garlic powder, and salt to a medium mixing bowl.
Whisk for 30 to 60 seconds, until smooth and the sugar is well incorporated.
Whisk in 1 tablespoon of water. Add more water 1 teaspoon at a time if a thinner consistency is desired.
Taste and adjust with a little more rice vinegar for tanginess, sugar for sweetness, or Sriracha for heat.
Cover and refrigerate for at least 1 hour before serving. You can also prepare the sauce several hours ahead or refrigerate it overnight.
Notes
For a spicy variation, add 1/2 to 1 teaspoon Sriracha.
For a subtle nutty flavor, add 1/4 teaspoon toasted sesame oil.
Adjust the consistency by adding water 1 teaspoon at a time.
Keep refrigerated in a clean, airtight container.
Use within 3 to 4 days as a conservative storage recommendation when made with commercial mayonnaise and kept properly refrigerated.
