Description

This propitious mango ice cream recipe features a creamy mango center inside a glossy yellow shell that looks just like the real fruit. No churn required, and customizable with or without the candy coating.


Ingredients

  • 1 cup mango puree
  • 1 cup heavy whipping cream (8 ounces)
  • ½ can sweetened condensed milk (7 ounces)
  • 1 cup yellow chocolate candy melts (optional)
  • 1 tbsp coconut oil (optional; helps thin the chocolate coating)

Instructions

  1. Peel and pit ripe mangoes, then blend until smooth to make 1 cup of puree.
  2. Use a hand mixer to beat the heavy cream in a large bowl until firm peaks hold their shape.
  3. Add sweetened condensed milk to the whipped cream and mix on low speed until fully combined.
  4. Add mango puree and blend on low until smooth and evenly colored.
  5. Pour the mixture into mango-shaped silicone molds or a freezer-safe container.
  6. If you’re using molds, place a popsicle stick in each one and freeze for a minimum of 6 hours, or until completely firm.
  7. Melt yellow chocolate melts with coconut oil in a microwave-safe bowl in 30-second intervals, stirring between rounds.
  8. Line a baking sheet with parchment paper.
  9. Remove one frozen bar at a time and dip into melted chocolate, letting excess drip off.
  10. Place dipped bars on the baking sheet and freeze again briefly to set the shell.
  11. Optionally brush the top and bottom with strawberry powder or food coloring for realism.
  12. Store in a freezer-safe container with parchment layers to avoid sticking.

Notes

  • Use sweet, non-fibrous mangoes like Ataulfo or Alphonso for best texture.
  • To make it vegan, swap dairy for coconut cream and plant-based condensed milk.
  • Work quickly during coating to prevent melting.
